  3. Almond Praline: Biscuit moelleux, almond praline cremeux, almond crunch, almond mousse

Why Ksenia Penkina:

Ksenia Penkina is a renowned pastry artist based in Vancouver, Canada, known for her stunning mirror-glazed cakes. After earning her degree in Switzerland, Ksenia delved deep into the chemistry of pastry, focusing on the intricate balance of flavors and textures. Her vibrant, multi-colored mirror glazes have earned her international acclaim and the title of "Glazing Queen."

Ksenia made history in 2016 by being the first in the pastry industry to launch an online class, reaching over 45,000 students in five years.

During her glazing career from 2016 to 2020, Ksenia invented all the glazing effects that exist today, except for one. Eight signature glazing techniques that have become the foundation of modern mirror glazing:

Ksenia has published three recipe books and one theory book, collaborated with top brands on pastry molds, and created the signature pastry-inspired perfume "Keep Glazed." In 2022, she founded PastryClass, a platform featuring iconic chefs such as Pierre Hermé, Cédric Grolet, Frank Haasnoot, and Jordi Roca, transforming online pastry education and empowering chefs and bakers worldwide.
